Mexican Style Pork Stew with Pomegranate Salsa

I wanted to make something different for Christmas- and so I came up with this dish. It is all about Latin flavors right now, so I went with my obsession and made a sauce with poblano and cubanelle peppers. The pork is cooked in this delicious, flavorful sauce until the meat is falling off the bone. I topped the delicious stew with queso fresco and a pomegranate salsa. I kept it simple by serving the stew with some freshly bakes baguettes and a flavorful yet simple tossed salad. It was a lovely and yummy evening…
